Ingredients

- 2.82 oz all-purpose flour
- 1 tsp baking powder
- 1 lemon zest
- 4.41 oz custard cream
- 1 cup heavy cream, 35% fat
Steps
Prepare the base batter, beat the eggs with the sugar until doubled in volume, add the flour with the baking powder and lemon zest, fold manually and pour the mixture onto a tray lined with parchment paper.
Form a rectangle about 8 inches x 10 inches, level it, and bake in a preheated oven at 392°F for 7 minutes, then remove, let it cool slightly, and cut with a 4-inch round cutter or into 6 squares.
Place the discs in a muffin tin, bake and cook in a preheated oven at 356°F for 4-5 minutes, with fan.
Prepare the custard cream and let it cool in a bowl covered with cling film in contact and let it cool.
When the cream is cold, whip the cream and mix the two compounds together.
