Ingredients
- 1 puff pastry
- 1.75 oz smoked salmon
- 3.5 oz ricotta
- as needed arugula
Steps
Cut the puff pastry into 6 rectangles of 4 inches or use all the pastry and increase the filling amounts.
Join the sides using your index finger and thumb then twist them in opposite directions to form the candy.
Take some aluminum foil and place it inside the candies, balling it up to maintain the shape, bake in a preheated oven at 392°F for 10-15 minutes, remove and let cool.
Work the ricotta with chives, white pepper, and salt, stuff the boats, add arugula and sliced salmon, tie chive strings to the candies and keep in a cool place until serving.
Avoid the fridge if possible, the pastry softens, if you have time, bake the boats beforehand and fill them when needed, even half a day before is fine.
