Ingredients
- 1 3/4 cups all-purpose flour
- 1 cup almond flour
- 1/2 cup butter
- 1 egg yolk
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract (or vanillin)
- 1/4 cup sugar
- 1/2 teaspoon salt
Steps
Sift the flour onto the work surface with the cinnamon and a pinch of salt, make a well in the center.
Add the sugar, egg yolk, vanilla extract or vanillin, and butter cut into pieces.
Work quickly until a smooth dough is obtained, then cover it and let it rest in the refrigerator for at least 30 minutes.
Remove the dough from the refrigerator and roll it out to a thickness of 1/8 inch and cut with a cutter, make a hole in the center of half of them, you should get about 15-16 cookies.
Place the cookies on the baking sheet and bake for 15 minutes, remove from oven and let cool.
Fill with jam and pair the cookies then sprinkle with powdered sugar.
