Ingredients
- 1 cup all-purpose flour
- 2/3 cup potato starch
- 2 egg yolks (hard-boiled)
- 3/4 cup butter
- 1/3 cup powdered sugar
- lemon zest
Steps
Boil the eggs for 7 minutes, then immerse them in cold water, let them cool and peel them.
Put the yolks with the butter in the food processor and mix together, then add the flour with the starch, sugar, and grated lemon zest.
Mix everything, then move the dough onto the work surface, knead it a little with your hands to make it smoother, work quickly because it is a dough rich in butter and should not heat up too much.
Make 12-15 balls and place them on a baking sheet lined with parchment paper, press the center with an index finger, decorate with pistachio crumbs, and bake in the hot oven at 350°F
Bake for 15 minutes, then remove and fill with spreadable pistachio cream, jam, or Nutella.
