Ingredients
- 2 cups all-purpose flour
- 2 eggs
- 1/2 cup sugar
- 1/3 cup extra virgin olive oil
- 1/3 cup water (or milk)
- 1/2 packet baking powder
- 1/4 cup Greek yogurt
Steps
Mix the eggs with the sugar using a hand whisk or electric mixer, then gradually add the flour with the baking powder.
Add a pinch of salt, the oil, water, and finally the yogurt and a splash of lemon juice, always mixing with the whisk or a spatula by hand.
Pour the mixture into a greased and floured 9-inch (22 cm) cake pan, bake in a preheated oven at 350°F (180°C) and bake for 30 minutes.
Remove from the oven and let it cool before cutting.
