Shortbread Christmas Tree Cookies

Easy to prepare, the shortbread Christmas trees take little time and are truly delicious, melting in your mouth with the meringue coating that takes 3 minutes.

The recipe for the shortbread Christmas trees is very simple, you make a simple cocoa shortbread and cut it, you can fill them with Nutella, pistachio cream if you don’t like meringue; I adore them.

I tried them with meringue, rosemary, and pepper and I must say they are truly delightful, the aroma of the spices matches perfectly with the cocoa shortbread and meringue.

Even the little one at home loved them, avoiding the spices obviously, they are optional but if you like them try this way because they are really good.

Shortcrust Christmas tree cookies

Ingredients

  • 1.5 cups all-purpose flour
  • 1 piece egg
  • 1/3 cup sugar
  • 1 tsp baking powder
  • 1/4 cup unsweetened cocoa powder
  • 6.5 tbsp butter
  • 2 egg whites
  • 1/3 cup sugar

Steps

P.S. the amount of egg white is more than sufficient for 10-15 trees, if you can whip up just one egg white it’s better, you can still reuse what is left in a cake.

  • Prepare the cocoa shortbread, put the flour on the work surface and make a well in the center, add the baking powder, cocoa, egg, sugar, and soft butter in pieces.

  • Quickly work the shortbread, make a dough and put it in the fridge to rest for 30 minutes.

  • After the time has passed, take the shortbread and roll it out on the floured surface then cut it with star-shaped molds of different sizes, I used 5 and arranged the cookies on the oven tray.

  • Bake and cook in the hot oven at 350°F for 15 minutes, remove from the oven and let cool.

  • Whip one egg white, if you can’t then add the other, beat them to stiff peaks, then add the sugar and a pinch of vanilla or a drop of lemon or orange and beat again.

  • Use the cream to assemble the trees, I made 3 but at least 4 should be possible, decorate with rosemary sprigs and pink pepper.
