Greek-Style Cake with Apples and Amaretti

Ingredients

  • 1 puff pastry
  • 1 apple
  • 10 amaretti
  • 2 eggs
  • 1/4 cup sugar
  • 1/2 cup all-purpose flour
  • 1 1/2 packet baking powder
  • 1/4 cup almond flour

Preparation

  • Place the puff pastry in a rectangular baking pan of 8 inches leaving a border of 2-3 inches, cut the excess pastry.

  • Beat the eggs with sugar until they double in volume then add the flours with the baking powder and mix well.

  • Peel and chop an apple, pour the mixture into the baking pan, add the apples and mix.

  • Crumble the amaretti, add them to the mixture, stir a little, then fold the edges of the puff pastry over the filling.

  • Bake in a hot oven at 355°F for 25 minutes.
