Ingredients for Stewed Cod with Onions:
- 1.3 lbs desalted cod
- 2 cups yellow onions
- 3.5 tbsps extra virgin olive oil
- to taste fine salt
- to taste all-purpose flour
- 2 tbsps salted capers
- 14 oz canned peeled tomatoes
- to taste black pepper
- to taste fresh parsley

Steps to Prepare and Cook Stewed Cod with Onions:
Take the desalted cod and check thoroughly for any bones, then cut it into pieces and let it dry well on some paper towels.
If you still have salted cod, read HERE the procedure to desalt it.Then pass the fish pieces in the flour.
Peel the onions, slice them thinly, put them in the pan, add the extra virgin olive oil, and salt them, then cook for 5 minutes to soften them well.
Remove them from the pan, leaving the oil remaining from the cooking.
Add the previously floured fish pieces to the pan and brown them well on both sides, then add the peeled tomatoes cut into pieces, the previously desalted capers, and the onions.
Add a little black pepper and cook for about 15 minutes, covering with a lid, turning them very gently halfway through cooking.
Once cooking is complete, turn off the gas, add freshly chopped parsley, and serve immediately.
Serve your preparation with toasted bread, or with some polenta baked or air-fried.
It is recommended not to salt the preparation as the cod tends to retain a slight salty flavor.
