  • 1/3 cup couscous
  • 1 cup cleaned broccoli florets
  • 4 oz chicken breast
  • 1 tablespoon extra virgin olive oil
  • to taste salt
  • to taste pomegranate seeds

Steps

  • To prepare the recipe, start by cleaning the broccoli, removing the tough stem, and separating the florets.
    Wash the broccoli, put a pot of water on the stove, add some salt, and bring it to a boil.
    Once the water boils, add the broccoli florets and drain them when cooked.

  • After cooking the broccoli, proceed with the preparation of the chicken breast by heating the grill pan.
    Once hot, place the meat on it and season with salt and garlic powder.

  • Grill on both sides.

  • Move to the final step of the recipe: preparing the couscous.
    Pour the pre-cooked couscous into a large bowl and cover it with boiling water.
    I used boiling water for a lighter version, but you can also use vegetable broth.
    Once the couscous has absorbed the water, start fluffing the grains with a fork.

  • Cut the chicken into small pieces and mix it with the broccoli, season with a tablespoon of extra virgin olive oil.

  • Combine the ingredients with the couscous and mix.
    Finish by adding the pomegranate seeds.
