Pizza with Onions and Cheese

PIZZA WITH ONIONS AND CHEESE, simple and tasty recipe, great dish for dinner, also perfect as an appetizer.

If you love onion and cheese pizza, you can’t miss this one. For the preparation, I used the combo method after a slow rise in the fridge, for me, it is the best way for a great result.

Of course, you can prepare the dough base and let it rise at room temperature instead of in the fridge as I did, but this onion and cheese pizza, I assure you, was devoured.

I don’t often, or perhaps almost never, cook onion pizza because not everyone likes it, only my son, and the most important thing is cooking the onion to remove the bitterness.

Pizza with Onions and Cheese

Ingredients

  • 2 1/2 cups all-purpose flour
  • 3/4 cup water
  • 1 teaspoon salt
  • 3/4 teaspoon fresh yeast
  • 1 cup red Tropea onion
  • 2 3/4 oz asiago cheese

Preparation

  • Dissolve the yeast in the water, pour the flour into a bowl, add the water a little at a time while you start kneading.

  • Add the salt and knead until everything is smooth and slightly sticky, dust with a bit of flour and let it rest in a bowl covered with plastic wrap.

  • I leave the dough to rest in the fridge overnight, of course, you can also keep it in the switched-off oven.

  • Once risen, take the dough and let it sit at room temperature for an hour if you kept it in the fridge.

  • Or proceed directly with 3 rounds of folds with a 15-minute rest between each fold.

  • Meanwhile, slice the onion and cook it in a pan with white vinegar and water for 5 minutes, then drain and set aside.

  • Take the dough and spread it in an oiled pan or on a baking sheet.

  • Personally, I prefer the first cooking in a pan, so top the pizza with onion and cheese and cook for 5 minutes.

  • Transfer the pizza to the oven under the preheated grill at 520°F or 480°F and cook for 5-7 minutes.

  • If you bake it directly in the oven, bake at 480°F in a hot oven for 10-15 minutes max, of course, keep an eye on the oven.
