Ingredients
- 12.3 oz red potatoes
- 2 tbsp all-purpose flour
- 3.5 oz sausages
- 3.2 oz smoked provola

For the recipe, I used red potatoes, I find them better for this type of recipe, but white or yellow potatoes are fine too.
You can add eggs and parmesan to the potatoes to make them even more flavorful.
Peel the potatoes, cut them into pieces, then boil them and mash them with a potato masher.
Gather the puree in a bowl, salt to taste, then form 3-4 patties and flatten them to a height of 1/4 inch
Break up the sausages after removing the casing and cook in a pan with the lid on.
Optionally, coat the crostini in breadcrumbs, then cook them in a drizzle of oil, turning them, then top with cheese and sausages.
Cover with the lid and cook for a few minutes to melt the cheese.
