You can enrich the cake with shredded coconut or with pieces or drops of chocolate or other fruits such as apples, bananas, or strawberries.
For the recipe, I used nectarines, but classic yellow or white peaches are also great if you prefer, I adore nectarines.
but if you don’t like peaches, you can obviously remove them and leave the cake simple.

Ingredients
- 2 eggs
- 2.5 oz sugar
- 1.25 cups all-purpose flour
- 1 1/2 packet baking powder
- 1.5 tbsp vegetable oil
- 3.5 tbsp milk
- 1 cup nectarines
Preparation
Beat the eggs with the sugar and a pinch of salt with an electric whisk until doubled in volume.
Add the sifted flour with the baking powder a little at a time while continuing to whisk.
Cut the peaches into pieces and add them to the batter, then mix well.
Butter and flour a 8-inch mold and pour in the batter, tap the mold a little on the table to remove air bubbles.
Bake in a 350°F preheated oven for 25 minutes.
