Savory Puff Pastry Monster Tree for Halloween.
Once again, I turn sweet into savory, and the result is… terrifying!
This year bring the magic of Halloween to your table with a simple but impactful idea: the Savory Puff Pastry Monster Tree!
It’s made in minutes, with a tasty filling of spinach, ricotta, and parmesan, and a shape that will astonish both adults and children.
Perfect as an appetizer or savory snack, it’s ideal for setting up the Halloween buffet along with muffins, cookies and jam-filled pumpkins.

Ingredients
- 1 sheet puff pastry (rectangular)
- 3 1/2 oz spinach (fresh)
- 9 oz ricotta
- 1 egg
- 1 3/4 oz grated parmesan
- to taste salt
- 1 crack black pepper
- 1 egg yolk
- to taste balsamic glaze

Steps
In the blender, we put the raw spinach and chop it finely.
Add the ricotta, the egg, the parmesan, a pinch of salt and pepper and blend everything until a smooth and homogeneous cream is obtained.
Roll out the puff pastry sheet and cut it in half.
Place one half on a baking tray lined with parchment paper and spread our green cream on top, leaving a bit of edge all around.
Cover with the other half of the puff pastry and seal the edges well.
With the tip of a sharp knife, cut out the trunk and then side strips as indicated in the photo, to form the branches.
Gently roll each strip onto itself to create the “twisted branch” effect.
Finally, carve the eyes and mouth with a knife and brush the entire surface with the beaten egg yolk for perfect browning.
Bake at 355°F (180°C) for about 25-30 minutes, until golden.
Once cooked, let it cool slightly and draw a scary face with balsamic glaze.
We can add small plastic decorations (like spiders or mini pumpkins) for an even more Halloween-esque effect!
Preservation and Tips …
Store covered with aluminum foil.
Consume within 2 days.
