Chicken Bites with Pumpkin and Mushrooms
One of those recipes born on the fly, with what I had in the fridge: a little chicken, some pumpkin and a few mushrooms. I put them all together in a pan, added a dash of oil, a bit of broth and in 20 minutes dinner was ready!

Ingredients
- 1.76 lbs chicken breast
- 4 cups pumpkin (cleaned)
- 14 oz champignon mushrooms
- 1 clove garlic
- 2 tbsp extra virgin olive oil
- to taste salt
- to taste dried parsley
- 1/4 cup vegetable broth (or hot water with half a teaspoon of stock powder)

Steps
In a non-stick pan, heat the extra virgin olive oil. Add the garlic clove and let it flavor for a couple of minutes.
Add the diced pumpkin, sliced mushrooms, and cubed chicken. Season with salt, pepper, and a bit of chopped parsley.
Pour in 1/4 cup of vegetable broth (or hot water with stock powder), cover with a lid, and cook over medium heat for about 20-25 minutes, stirring occasionally.
When the pumpkin is soft, the mushrooms are well cooked, and the chicken is golden and tender, it’s ready to serve.
