Ingredients

  • 2 eggs
  • 3 1/2 tbsp butter
  • 3/4 cup all-purpose flour
  • 1/3 cup potato starch
  • Half packet baking powder
  • 1 tsp lemon zest
  • 1/3 cup sugar

Preparation

For a 8-9 inch cake, double the dose

  • Take the butter out of the fridge a few hours earlier, it should be very soft.

  • Place the butter in the mixer with the sugar and work it with the K beater until it becomes soft like a cream

  • Add the eggs and work at maximum speed, add half of the sifted flour with the baking powder.

  • With the mixer running, add the lemon zest, the rest of the flour, and the potato starch.

  • Butter and flour an 8-inch pan, pour the mixture, shake the pan to avoid air bubbles, and bake.

  • Bake in a preheated oven at 350°F for 30-35 minutes, do a toothpick test and do not open the oven before 20 minutes.

  • Remove from oven and let cool then sprinkle with powdered sugar.
