Delicious zucchini and provola omelette roll with the addition of cooked ham if you prefer to enrich it a bit, but it is also good without it, ideal for dinner and perfect as an appetizer cut into pinwheels.

The recipe for preparing the zucchini omelette roll and provola is very simple, you beat the eggs and add the zucchini, bake, fill and bake again, a real delight.

My roll is gratinated with breadcrumbs, I assure you that the crispy breading makes it even better and of course, you can fill it as you like, with whatever you have in the fridge.

Great also with speck or arugula and obviously the breading is optional.

Ingredients

  • 4 eggs
  • 3 tablespoons all-purpose flour
  • 2.1 oz cooked ham
  • 3.5 oz zucchini
  • 2.5 oz fresh mozzarella
  • 1.4 oz breadcrumbs

Preparation

  • Beat the eggs in a bowl with a hand whisk.

  • Grate the zucchini and add them to the eggs, add the flour, salt, and/or pepper to taste and mix with a spoon.

  • Place a sheet of parchment paper in a 9-inch round baking pan, oil it, and sprinkle with breadcrumbs.

  • Pour the eggs, spread them well, and bake in the preheated oven at 392°F for about 15 minutes, check that it is cooked; otherwise, extend the cooking by 5 minutes.

  • Remove from the oven, fill with ham slices (optional) and cheese pieces, then roll up.

  • Put back in the oven for 10 minutes.
