SOFT PISTACHIO COOKIES, delicious soft cookies, easy and quick, a tasty recipe to enjoy after lunch or for breakfast.
A real delight these pistachio cookie biscuits, they are soft and melt in your mouth, a real pleasure for the palate with the addition of chocolate chips they are the joy of adults and children.
The recipe to prepare the pistachio cookies is very simple, the dough can also be prepared by hand, they are filled and cooked, all in about half an hour, they are delicious.
Perfect for breakfast and great to enjoy after lunch or dinner, they will be snapped up, you can’t miss them, but of course, if you don’t prefer pistachio paste, remove it or replace it with nutella.
Cookies are typical American biscuits that I had the pleasure of tasting in New York in a sort of bar in Times Square, every morning they were a must, cookies and Neapolitan espresso, let’s say it was very close to ours.
They are very fragrant with cinnamon and therefore also have a brownish color, made with brown sugar, buttery and are about 4 inches in size, an incredible scent.
Of course, I didn’t want to mix too many aromas with the pistachio paste, but if you like, add cinnamon and use brown sugar.

Ingredients
- 3/4 cup all-purpose flour
- 3/8 cup pistachio flour
- 1 egg
- 1/3 cup sugar
- 1/4 cup butter
- 3/8 cup chocolate chips
- 1/4 cup crushed pistachios
- 3/8 cup pistachio paste
- 2 pinches baking soda (or baking powder)
Preparation
P.s. add a pinch of cinnamon if you like.
Pour the flour with baking soda or baking powder into a mixer or a bowl.
Add the sugar, the egg and knead, add a pinch of salt, the butter and work the mixture.
Finally add the crushed pistachios with the chocolate chips, work again until the mixture is nice and smooth.
Divide it into 6 pieces, take a piece and place it on the palm of your hand, stuff with a teaspoon of pistachio paste and close.
Place the cookies on the oven tray, bake and cook at 356°F in a preheated oven for 15 minutes.
