A simple and truly delicious idea, the almond and amaretti roll is perfect if you are looking for a quick dessert to use up some dried fruit with a light puff pastry without butter and oil.

The almond and amaretti roll is similar to a strudel, of course, the filling changes a bit compared to the typical Trentino dessert made with apples, raisins, cinnamon, and honey.

I couldn’t find the honey in the fridge even though I used it a few days ago, so I opted for apricot jam, which I found perfect, even more so than honey in this dessert. Anyway, you can always vary it to your liking.

With the light puff pastry, you can make both sweet and savory dishes like this zucchini roll or a flatbread to cook in a pan, or a hazelnut roll.

Ingredients

  • 1 1/3 cups all-purpose flour
  • 1 egg
  • 1/3 cup water (approximately)
  • 2.1 oz almonds
  • 1.8 oz amaretti
  • 2.8 oz apricot jam (approximately)

Preparation

  • Pour the flour into the food processor or a bowl, add a pinch of salt, the egg, and start kneading.

  • Add the water a little at a time until the mixture is well combined and workable, that is, not sticky.

  • Chop the almonds into pieces and put them in a bowl, add the amaretti crumbled by hand and the jam then mix everything.

  • Roll out the dough on the work surface, make a rectangle about 18 x 8 inches, and fill it with the filling, roll it well and place it on the baking sheet lined with paper.

  • Bake in a preheated fan oven at 392°F for 15-20 minutes.
