A simple to make, really delicious dessert, the Sicilian almond cake is great to serve after lunch or dinner, rich and caloric but very good.
Soft and moist, it is very similar to the classic caprese cake, the Sicilian almond cake is the perfect cake to serve to unexpected guests, it remains moist and of course, it is also quite caloric.
It’s a delicious, quick and easy dessert, if you wish you can enrich it with chocolate chips or flavor it with lemon or orange zest.

Ingredients
- 4.25 oz peeled almonds
- 3 eggs
- 3.17 oz sugar
- 1.06 oz all-purpose flour
- 1.41 oz butter
Preparation
Slightly toast the almonds and grind them with a bit of sugar to reduce them to flour.
Melt the butter and let it cool slightly, beat the eggs with the sugar until it becomes frothy and doubles in volume, then add the butter.
Add the flour and almonds and gently fold in.
Pour the mixture into a greased and floured baking tin of 7-8 inches and bake in a preheated oven at 350°F
Bake for 30-35 minutes, do the toothpick test before removing from the oven, the cake remains moist inside but obviously not soggy.
