Ingredients
- 1 3/4 cups all-purpose flour
- 2 eggs
- 2/3 cup water
- 3.5 oz bacon
- 2.5 oz fiordilatte mozzarella
- 1 tsp salt
- Half packet instant leavening agent for savory preparations
- 1 tbsp extra virgin olive oil
- 5.3 oz zucchini
Preparation
Pour the eggs with the oil and water into a bowl then mix with a spoon.
Grate the zucchini with a large-hole grater and add to the liquids, mix well.
Add the salt, mix, then add the sifted flour with the leavening agent, mix little by little then add the bacon and cheese in pieces.
Oil a pan and pour the mixture, cook with a closed lid for about ten minutes then turn the flatbread and cook the other side.
Finish cooking for another 10 minutes and drain on absorbent paper.
