Ingredients
- 4 oz almonds
- 1 egg white
- 1 tsp lemon juice
- 1/3 cup sugar
- 1 tbsp lemon zest
Preparation
Pour the sugar with the lemon zest into a mixer and blend well, then add the almonds and blend again.
Add the lemon juice and mix with a spoon, then add the egg white and continue mixing.
Divide the mixture into 10 pieces, shape into balls and roll them first in granulated sugar and then in powdered sugar.
Place the cookies on the baking sheet lined with parchment paper, then press down slightly in the center with your thumb.
Bake in the oven at 350°F for 10-15 minutes maximum.
Remove from the oven and let cool, they will have a crunchy crust after 15 minutes of baking, remaining soft inside.
After 10 minutes of baking, they remain whiter on the outside with a softer crust, I baked them for 15 minutes.
