Do you like spoon desserts? I love them, they are prepared in a few minutes and don’t need much cooling time, they are quick and delicious desserts like this cold lemon crumble with cream and mascarpone.
A simple and quick dessert to prepare for lemon dessert lovers like me, maybe because I have two lemon trees always available or simply because I love them for their intense fragrance.
My fortune is having very large lemons that sometimes weigh almost 2 lbs, they are great for making many desserts but also for consuming in summer salads.
The cold lemon crumble is made with a simple mousse of cream and mascarpone, but if you prefer it lighter, ricotta or yogurt works well.
I usually use cream in cold desserts because it increases in volume when whipped, making the dessert creamier, but of course, not everyone likes it.

Ingredients
- lemon zest
- 1.4 oz sugar
- 9 oz mascarpone
- 1 cup fresh liquid cream
- 2 tbsp lemon juice
- 6 cookies
Preparation
Pour the sugar with the zest of half a lemon into a mixer and blend everything.
Add it to the mascarpone and mix well, then add the cream and lemon juice.
Whip everything with a hand blender for about 3 minutes, it should thicken, of course, you can use electric beaters.
Grind the cookies with the mixer but don’t turn them into powder.
Make a layer of cookies at the bottom of the cups, add a layer of mousse, then cookies and more mousse.
Decorate with a sprinkle of crumbs and a slice of lemon, then put in the fridge for at least 20 minutes.
