Ingredients

  • 2 Zucchini
  • 1 Yellow bell pepper
  • 10 Cherry tomatoes
  • 2 tablespoons Green olives
  • Oregano
  • Fiordilatte (optional)
  • 1 Shallot

Preparation

  • Wash the bell pepper, remove the top, the seeds, and the white part inside, then chop it into pieces.

  • Sauté the shallot briefly and add the peppers, cover with the lid.

  • Wash the zucchini and slice them into rounds not too thick, add them to the pan.

  • Cut the cherry tomatoes into 4 parts, add them to the rest of the ingredients, include oregano, olives, and rosemary if you prefer.

  • Salt to taste, stir, and cook for about 15 minutes or to your liking, I prefer the vegetables crunchy.

  • If you want to enrich the dish, add some diced fiordilatte towards the end of the cooking, avoiding melting it too much. Bon appétit
