The recipe of the scammaro omelette has ancient origins, created by Ippolito Cavalcanti and the Duke of Buonvicino, a Neapolitan gastronome, the idea was of a dish that could be good during Lent and that was eggless.
The dish is very simple, a seasoning that includes black olives, pine nuts, capers, and anchovies, very tasty.
The word scammaro comes from the dialect and means “lean” without animal fats, therefore also without eggs.
During Lent only sick monks were allowed to eat meat in their rooms, the room in Neapolitan dialect is called “cammera,” so jokingly this term “cammerare” was used to mean “eating fat.”
For everyone else it was “scammerrare” that is “eating without fat” (news here)
The dish is simple and very good, fried again in the pan without eggs even better.

Ingredients
- 7 oz spaghetti
- 2 tablespoons raisins
- 0.7 oz pine nuts
- 2 anchovies in salt
- 3 oz black olives
- 1 tablespoon capers in salt
- 1 clove garlic
- pepper
- parsley
Preparation
Pit the olives, sauté the garlic clove then remove it.
Put the anchovies in the pan and let them melt, add the olives, capers, and pine nuts.
Let it cook a bit, then turn off the heat.
Boil the pasta until al dente, when ready, drain it and put it in a bowl.
Add the prepared seasoning and pepper then mix well and pour it into the pan used before.
Let it cook until a crust forms on the bottom, then flip it with the help of a dish and continue cooking on the other side.
