Homemade Tagliatelle with Bolognese Sauce

Ingredients

  • 4 cups Durum wheat semolina
  • 5 Eggs
  • 1.1 lbs Minced meat
  • 1 Carrot
  • Half Onion
  • 6 cups Tomato puree
  • Parsley
  • 1 packet Saffron
  • 1 Egg (for the meatballs)
  • Stale bread
  • as needed Breadcrumbs
  • 2 tbsps Parmigiano Reggiano DOP

Preparation

  • First, prepare the pasta, pour the flour onto a board and make a hole in the center, add one egg and knead.

  • Add the second egg and knead again to incorporate it, continue until the last egg.

  • Take the dough and roll it out thinly on the board, sprinkle with semolina and roll without pressing, cut into 1/2 inch slices or use a pasta machine.

  • Prepare the sauce, put 300 g (10.5 oz) of minced meat in a bowl with the egg, one or two slices of soaked and drained stale bread, add salt and cheese.

  • Knead everything and form the meatballs, about 15, and roll them in the breadcrumbs.

  • Chop the onion, carrot, and parsley or celery if you like, fry in a large pan and add the minced meat.

  • Let it brown then add the tomato puree and the saffron.

  • Add the meatballs and cook for about an hour to an hour and a half on low heat.

  • Boil the water for the pasta, add when boiling and drain al dente, few minutes of cooking.

  • Dress the pasta with the Bolognese sauce and serve with a sprinkle of Parmesan.
