Bell Pepper and Fennel Salad

The roasted bell pepper and fennel salad is perfect, a side dish that I love even as a main course when I want to be lighter, excellent for deflating after a Sunday binge.

Of course, it is a very simple recipe that does not need much explanation but the bell pepper and fennel salad can be made and enriched in many ways, and the bell peppers can also be cooked in different ways.

Great for dinner but perfect even on Monday to start the week in a lighter and cleaner way.

Bell pepper and fennel salad

Ingredients

  • 1 red bell pepper
  • 2 tablespoons black olives
  • 2 fennel
  • 1 yellow bell pepper
  • stalk of celery

Instructions

  • Wash the bell peppers and cut them into strips not too thin.

  • Place them on the oven tray with a drizzle of oil and cook under the grill at 392°F for 10-15 minutes.

  • Obviously, you can extend the cooking time if you like them very soft.

  • I personally do not peel them because I like them like that, but you can do it easily.

  • Cut the fennel and soak them for a while with baking soda or disinfectant if you use it to sanitize.

  • Rinse well and put them in a salad bowl, add the bell peppers and olives.

  • Chop the celery stalk into cubes and add them to the rest of the ingredients, drizzle with oil to taste.
