Ingredients
- 1 1/4 cups All-purpose flour
- 3 Eggs
- 2/5 cups Sugar
- 1 tbsp Extra virgin olive oil (optional)
- Half packet Baking powder
- Nutella
Preparation
Pour the eggs into a bowl, add the sugar, and quickly work with a hand whisk for a couple of minutes.
Add the sifted flour with the baking powder and always mix, if needed add a little water or milk and the oil if you prefer.
I didn’t add any oil but just a tablespoon of water.
Oil a non-stick pan of 8-9 inches and heat it a little then pour the creamy mixture.
Keep the flame very low and cover with a lid larger than the pan otherwise it sticks to the batter.
Cook for 3 minutes, check the bottom that it is not burning and continue for another 2 minutes.
Now you need to flip the pancake, move away from the stove and try to flip it in one go.
Alternatively, oil a plate flip the pan quickly oil it again and slide the pancake.
Do not leave the pancake on the plate for too long because being hot it risks sticking.
If you want, use another skillet even if it’s bigger it’s okay because it has already taken shape.
Cook always for 3 minutes and check the bottom then continue another 2 minutes on low flame.
Remove from the pan, let it cool slightly and cut it in half to fill.
Alternatively, it can be baked in a convection oven at 350°F for 15 minutes.
