Ingredients

  • 1 1/4 cups Potato starch
  • 1 1/3 cups All-purpose flour
  • 3 Eggs
  • 3/4 cups Sugar
  • 3 tbsps Corn oil
  • 1/4 cup Milk
  • 1/2 packet Baking powder
  • Lemon zest
  • Vanilla extract
  • 1 Apple

Preparation

  • Beat the eggs with the sugar with a mixer until very fluffy.

  • Set the mixer speed to low and gradually mix in the sifted flours with the baking powder.

  • Add the vanilla extract, grated lemon zest, milk, and oil.

  • Peel the apple, but use two if they are small, and cut into small pieces.

  • Add them to the batter and mix with a spatula.

  • Grease and flour a 20 cm (8-inch) baking pan and pour in the mixture.

  • Bake in a preheated oven at 350°F with fan for 30 minutes, always do a toothpick test to ensure it’s dry.
