Ingredients

  • 2 1/8 cups All-purpose flour
  • 1 Egg
  • 6 tbsps Extra virgin olive oil
  • 2 tbsps Water
  • 1 pinch Salt
  • 1 pinch Ground cinnamon
  • 2 1/2 oz Dry biscuits (or amaretti)
  • 1 Apple
  • 3/4 oz Raisins
  • 1/3 oz Walnuts
  • 1/3 oz Pine nuts
  • 1/4 cup Custard
  • to taste Ground cinnamon

Preparation

  • Prepare the custard following the link at the end of the recipe, cover it with cling film and let it rest

  • Prepare the strudel pastry, put the flour in the mixer, add the yeast, oil, a pinch of salt, cinnamon, and start kneading.

  • Add some water to prepare a smooth and homogeneous ball. The dough must not be sticky, roll it out to form a rectangle.

  • Peel and cut one or two apples into cubes, chop the walnut kernels and crumble the biscuits with your hands.

  • Place the biscuits on the rectangle, add the walnuts, pine nuts, apple, and custard.

  • I filled the pastry with almost double the ingredients, but the roll didn’t close well.

  • Place the dessert in a 8-inch mold; it doesn’t matter if the pastry breaks.

  • Preheat the oven to 350°F, bring it to temperature and bake the dessert.

  • Bake for about 25 minutes until done.
