Ingredients
- 4 3/4 cups all-purpose flour
- 2 1/2 cups rye flour
- 3/4 cup whole wheat flour (I used tumminia)
- 2 1/2 cups lukewarm water
- 2 1/2 tsp compressed yeast
- 3 1/2 tbsp olive oil
- 1 tbsp salt
- 1 tsp honey
- to taste coarse salt (or seeds of your choice)
Steps
Start by pouring the flours into the bowl of a stand mixer and mixing them, in a second little bowl pour the yeast, about 3 1/2 tbsp of lukewarm water, and the honey, let the yeast and honey dissolve and add the mixture to the flours and activate the stand mixer with the dough hook, gradually adding the remaining water alternating with the oil, finally add the salt.
When the dough becomes sticky, it will be ready. Cover with a cloth and let rise until doubled, it will take about 3-4 hours.
At this point, form balls of about 1 1/2 oz and shape a tree on a baking sheet lined with parchment paper and let them rise for another 30 minutes or so.
At this point, sprinkle a little coarse salt on the tree and bake in a preheated static oven at 350°F for about 20-30 minutes.
Your tree will be delicious both freshly baked and cold, perhaps served with appetizers during the Christmas holidays.
