Today I want to propose to you a super tasty recipe: my walnut swirls. A dessert made of very soft brioche dough and lots of walnuts, scented with cinnamon. These swirls remind me of cinnamon rolls even though in Germany they are called Nussschnecken, yes you read that right, the word has 3 S’s….in German, understand with the new reform to find these words. They are really easy to make and if you don’t have time, you can also use ready-made brioche dough, as I did for these photos, so your walnut swirls will be ready in about 30 minutes.
But now let’s see how to prepare them in the following recipe.

Ingredients
- 4 cups all-purpose flour
- 0.42 oz compressed yeast
- 2 tsp sugar
- 1 cup milk
- 3.5 tbsp butter (vegan option)
- 1 pinch salt
- 1.5 cups finely chopped hazelnuts (or almonds)
- 0.21 cup chopped hazelnuts
- 0.42 cup milk (or plant-based drink)
- 2.5 tbsp powdered sugar
- 2 tbsp ground cinnamon
- 0.5 cup powdered sugar
- 2 tbsp hot water

Steps
Start preparing your walnut swirls by warming the milk, but don’t let it boil. Dissolve the yeast, sugar, and butter in the warm milk. Then pour the flour into a bowl and slowly add the liquid mixture while operating your stand mixer at low speed. Make sure not to forget the dough hooks. When the liquid is well incorporated, add the salt and finish kneading by hand for a couple of minutes. Your dough should be smooth and homogeneous; if not, add a little bit of milk and continue kneading. At this point, place the dough in a bowl, cover with plastic wrap, and let it rise for a couple of hours or until doubled in size.
Now preheat the oven to 350°F in static mode.
Now prepare the filling: just pour the chopped hazelnuts, the chopped pieces, milk, and 2.5 tbsp of powdered sugar into a bowl. Mix with a spoon until you have a sticky mixture. Now roll out the dough to form a rectangle. Pour the filling and spread it evenly over the entire rectangle. Now fold the dough into 2 equal parts and cut 6-7 strips about 0.39 inches thick. Roll each strip on itself to form a kind of swirl. Repeat until you have finished the dough and place all the swirls on a baking tray lined with parchment paper.
Brush then with milk or egg yolk and bake for about 30-35 minutes, until you have obtained nicely golden walnut swirls.
At this point, prepare the water glaze simply with powdered sugar in a bowl and add the water a little at a time, stirring vigorously until you get a glaze. Then pour the glaze over your still warm swirls and let them dry well before enjoying them. They are delicious.
