Black Cocoa Bread

Black cocoa bread is a soft loaf perfect for breakfast and more. It might look a bit intimidating at first, but I assure you it’s delicious and very soft. It would be ideal to make for Halloween, but it’s great all year round. The special feature of this bread is that I used black cocoa, but regular cocoa works just as well. The result will be a bread that is not black, but cocoa-colored. Now let’s see how to prepare black cocoa bread in the recipe that follows.

Ingredients

  • 4 3/4 cups all-purpose flour
  • 1/2 cup black cocoa
  • 2 tsp fresh yeast
  • 3/4 cup milk (lukewarm)
  • 1/2 cup water
  • 1/4 cup butter (melted)
  • 1/3 cup sugar
  • 2 tsp salt
  • 1 egg yolk (for brushing)
  • 2 tbsps milk (for brushing)

Steps

Begin the preparation of your black cocoa bread by pouring flour and cocoa into the stand mixer, mix them for a couple of minutes to combine.

Now pour the yeast into the water with the sugar and let them dissolve. Then start the stand mixer with the dough hook and pour the water, sugar, and yeast mixture into the flour. Once done, add the lukewarm milk and melted butter, and continue kneading until you have a smooth and homogeneous dough.

  • At this point, let the dough rise in the mixing bowl until it doubles in size. It usually takes 2-3 hours. I recommend covering the dough with a cloth and placing it in a warm, draft-free area of the house, ideally in the oven at 122°F.

  • When the dough has risen well, weigh it and divide it into 2 equal parts. With this quantity, you will get 2 black cocoa loaves.

    Divide each piece into 3 parts and form balls, which you will place in the pan that you have previously buttered.

  • Let your 2 loaves rise again until they double, again estimating at least 2-3 hours.

    After this time, preheat the oven to 392°F, mix the egg yolk with the milk, and brush your black cocoa bread thoroughly, then bake in the hot oven for about 30 minutes.

    Once baked, let cool slightly, remove from the pan, and enjoy with spreads, jam, or even on its own, it’s very tasty.
