Ingredients for a 9.5-10 inch pan
- 4 eggs
- 6.3 oz sugar (I use sweetener)
- 3.5 oz butter (lactose-free)
- 7.1 oz plain or lemon Greek yogurt (I use lemon and lactose-free)
- 1 packet baking powder
- 10.6 oz all-purpose flour
- 1 lemon
- 3.5 oz lemon curd (or you can find it in the supermarket among the jams)

Steps
Start preparing your lemon curd cake by preheating the oven to 356°F, then separate the yolks from the whites, beat the latter until stiff peaks form, and set aside. In a second bowl, beat the yolks with the sugar for at least 4-5 minutes until you have a frothy and light cream. Note: it’s always better to use room-temperature eggs to achieve this result. At this point, add the softened butter and continue beating.
Now mix the flour and baking powder, sift them and pour them into the bowl alternating with the yogurt. Now add the lemon zest and juice and leave the beaters. With a spoon, then add the beaten egg whites, incorporating them into the batter from bottom to top. Then butter a 10-inch pan, or 9.5-inch will do. Pour about 3/4 of the batter and add a few teaspoons of lemon curd if you like, as you can see in the first picture below.
Now pour the remaining batter, level it, and if you like, pour the lemon curd into a piping bag and make decorations on the surface of the cake. I made a spiral, for example, but you can get creative with the decoration.
At this point, bake your lemon curd cake and let it cook for about 25-30 minutes. Check with a toothpick after about 20 minutes, and only when it’s well cooked, take it out of the oven, let it cool well, and then serve.
