Today I want to propose some treats that melt in your mouth, a unique goodness and I’m not exaggerating, I present to you the quick fruit croissants. These are sweets that have a croissant dough base, filled with pastry cream and decorated with lots of delicious fresh seasonal fruit. Mine is a quick version because I bought the croissant dough. These are sweets of German origin, here they are indeed called Obst Plunder and are made in many variations. But now let’s see together how to prepare the fruit croissants in the following recipe.

Ingredients
- 2 1/8 cups milk
- 1/2 cup sugar
- 4 egg yolks
- 1/2 cup cornstarch
- 1 lemon (zest)
- 1 roll of croissant dough
- 1 egg yolk
- 3 tablespoons powdered sugar
- 1 tablespoon hot water
- 12 strawberries
- 18 blueberries
- 2 kiwis
- 6 leaves mint

Steps
Start preparing the pastry cream, you can find the whole procedure HERE.
As soon as it’s ready, cover it with plastic wrap and let it cool properly.
Now preheat the oven to 390°F in static mode.
Roll out the croissant dough, measure, and cut into 6 equal squares.
Now take your pastry cream and pour a generous spoonful in the center of each square.
Fold all the corners of the dough towards the center as you see in the picture below.
Then pour another generous spoonful of cream again in the center of the second square you’ve formed.
Now brush with beaten egg.
ATTENTION now lower the oven temperature to 356°F and bake for about 15-20 minutes.
They should be golden brown before taking them out of the oven.
At this point, wash the strawberries and blueberries well. Cut the strawberries in half or into 3 pieces. Peel the kiwis and cut them into 6 or 12 pieces as you prefer.
Also prepare the glaze by pouring the powdered sugar into a small bowl, add the hot water, and mix vigorously until you obtain a glaze.
Now take your fruit croissants out of the oven still without fruit and let them cool very well.
In the meantime, while waiting for them to cool, I recommend already decorating them with the glaze, so that it dries well too.
At this point, decorate with the fruit you just cut, placing the fruit right in the center of the fruit croissant.
Indeed you will notice that the cream has formed a sort of hollow, perfect for placing the fruit.
Decorate, if you like, with some mint leaves and serve your fruit croissants very cold. They are fabulous.

You can make these fabulous sweets also with other fruits in winter like canned apricots, the result will be just as delicious.
And yes, you can also use classic puff pastry to make them, but I’ll tell you now that the result and texture will be completely different.
