Glass Noodles with Vegetables and Fish

Glass noodles with vegetables and fish are a flavorful and colorful dish, perfect for those who love Asian cuisine and want to try making it at home. They are a type of pasta shaped like spaghetti but made from water and starch. They are very convenient because they don’t require actual cooking, just soaking in hot water for a few minutes, and they are ready to use. Once cooked, they resemble glass, hence the name. For the best results, it’s advisable to use some Asian condiments like curry paste, soy sauce, and teriyaki sauce, but if you can’t find them, don’t worry; the overall taste is still very good. Now let’s see how to prepare these glass noodles with vegetables and fish.

  • Difficulty: Easy
  • Cost: Economical
  • Preparation time: 10 Minutes
  • Portions: 4
  • Cooking methods: Stovetop
  • Cuisine: Italian
  • Seasonality: All seasons

Ingredients

  • 10.5 oz glass noodles
  • 10.5 oz cod fillet (or salmon)
  • 1 zucchini
  • 1 red bell pepper
  • 4 spring onions
  • 2 carrots
  • 2 tbsps teriyaki sauce (or sweet and sour sauce)
  • 2 tsps curry paste (or curry powder)
  • to taste soy sauce (or salt)
  • 1 tsp fresh ginger
  • to taste olive oil
  • to taste sesame seeds

Tools

For the preparation of this dish, it is advisable to use a wok pan, but if you don’t have one, a large regular pan will do.

Steps

  • Start by dicing the fish, then wash and chop the vegetables. You can also grate the zucchini and carrots if you like. The spring onions should be finely diced. At this point, pour the oil into the pan and add the diced fish. Let it cook for 5-6 minutes, then add the vegetables. Cook for another 5 minutes, add half a glass of water, and lower the heat.

  • Now start seasoning with the soy sauce. BE CAREFUL as it’s quite salty, so pour with moderation, and you can add more after cooking if needed. As for the curry paste and teriyaki sauce, you can be generous but not too much, as they will make the noodles more flavorful. When everything is cooked, place the glass noodles in a bowl and pour boiling water over them until covered, and let them soften for the time indicated on the package, usually 3 minutes. Drain the water and combine the noodles with the vegetables. Mix quickly, grate some ginger, adjust with more soy sauce if necessary, and serve with sesame seeds. Enjoy your meal.

Saby advises…

If you can’t find the sauces, I recommend using curry powder and being generous with ginger and a sweet and sour sauce.
