Today I want to share my recipe for my very soft pumpkin bread that stays soft for days and is easy to make. After trying my pizza pumpkins, I thought of making a real pumpkin bread with the same shape, even though a while ago I had already made the pumpkin sandwich bread, recipe HERE, but I hadn’t made the actual bread yet, so here I am sharing it with you. Besides being tasty and very soft, served with a good and warm pumpkin soup, your lunch or dinner will be a guaranteed success. But now let’s see together how to prepare this delicious pumpkin bread.

Ingredients
- 28 oz all-purpose flour
- 7 oz semolina flour
- 2 ½ cups water (lukewarm)
- 0.35 oz salt
- 8 oz pumpkin puree
- 0.7 oz fresh yeast
- to taste peanut oil

Steps
The first step to make pumpkin bread is to prepare the pumpkin puree. I steamed diced Butternut squash, make sure to prepare a bit more to get 250 g of puree, if you have any leftover, I’ll share another delicious recipe you can make later. Let the pumpkin puree cool well and start preparing your pumpkin bread.
In a bowl, mix the two flours, separately dissolve the yeast in a bit of water and pour it onto the flour, start kneading by adding the remaining water and finally the salt. When all ingredients are well combined, spread the dough and add the pumpkin puree and knead again until everything is homogeneous and compact. I recommend using a stand mixer because the dough will be quite sticky, but if you want, you can also knead by hand. Now place the dough in a bowl and let it rise until doubled, it will take about 2 hours. At this point, line a baking tray with parchment paper, take the kitchen twine, and cut 5 pieces about 8 inches long, crisscross them to form a star, brush the twine with some oil. Do this operation twice because you will get 2 small loaves.
Now weigh the dough and divide it into two equal-weight pieces. Shape into a round loaf and roll it in flour, place the bread in the center of the twine and tie the ends together so that you get a pumpkin shape. Once you have the two loaves, bake your pumpkin bread for about 30 minutes in a preheated oven at 350°F. Once ready, cut the twine and gently remove it from the base of the bread.
