The berry pavlova tree is an elegant dessert for Christmas Holidays, easy to make.
Without thermometers or special tools except a pastry bag with a small star tip, with simple ingredients, scenic and irresistible, it is perfect as a final dessert on the Holiday table, with meringue baskets filled with cream and berries and adorned with rosemary sprigs.

Ingredients
- 1 egg white
- 3.5 oz sugar
- 10.5 oz mixed berries
- 0.85 cups heavy cream
- lemon juice
- rosemary
Preparation of the Berry Pavlova Tree
Whip the egg white with an electric mixer.
When it turns white, add the sugar while continuing to beat with the mixer, then add a few drops of lemon.
Continue to whip until the mixture is very stiff (it will take about ten minutes).
Transfer it to a pastry bag with a small star tip and line a baking sheet with parchment paper.With the mixture, create spaced disks about two inches in diameter (there will be ten) and re-pass the mixture on the outer edges to create baskets.
Place the baking sheet on the lowest rack of the preheated oven at 212°F for 55 minutes.
In the meantime, rinse the berries under cold running water and put them in a small pot.Bring to a low flame and let cook for two minutes from boiling, then turn off and let them cool.
When they are cooked, remove the mini pavlovas from the oven and let them cool completely.
Whip the cream until stiff peaks form and distribute it in the meringue baskets.
Add a teaspoon of berries over the cream.Decorate with a few sprigs of rosemary and arrange them on a plate to form a tree: one for the tip, then two under the first, etc..
Decorate to your liking with a bit more rosemary your berry pavlova tree.
Consume it within a day of preparation.
