Ingredients
- 3 egg yolks
- 1.6 oz sugar
- 0.7 fl oz fortified wine (Marsala or sparkling wine)

Steps
Weigh the egg yolks and add the same quantity of sugar.
Put a pot with water on the stove and turn it on.
In a smaller pot, work the egg yolks with the sugar with a hand whisk, add the chosen liquor, I used cooked wine, mix and move to the stove.
Work the egg yolks in a bain-marie for 5 minutes; they should become foamy and soft.
Remove from the stove and let it cool, then pour it into the cups alternating with pieces of pandoro.
