Pear and Amaretti Bundt Cake

This year my garden gave us a lot of pears, so I couldn’t resist making a delicious and unique pear and amaretti bundt cake. To be honest, I added the amaretti just to try, unsure of the result, but the combination is truly delicious. Let’s see together how to prepare this soft bundt cake in the following recipe.

Ingredients

  • 4 eggs
  • 6.3 oz sugar
  • 7.1 oz yogurt (I use Greek and lactose-free)
  • 3.5 oz butter (I use lactose-free)
  • 10.6 oz flour
  • 3 pears (not too ripe)
  • 2.5 oz amaretti
  • 1.1 oz crushed almonds
  • 1 lemon (only the zest)

Steps

Start preparing your pear and amaretti bundt cake by beating the eggs with the sugar until you get a light and frothy mixture. Then add the softened butter and the grated lemon zest and continue to beat. Separately, mix the flour with the baking powder and incorporate it into the mixture alternating with the yogurt. Now roughly crumble half of the amaretti and add them to the dough, stirring everything with a spoon.

  • At this point, pour the batter into a 26 cm (10-inch) bundt cake pan that you have previously buttered and leveled well. Peel and slice the pears thinly, about 1/4 inch, then arrange all the pear slices on the surface of the bundt cake. Roughly crumble the remaining amaretti and sprinkle them on top, then do the same with the crushed almonds.

  • Now bake your pear and amaretti bundt cake in a preheated oven at 356°F for about 25-30 minutes. Always do the toothpick test before taking the cake out of the oven. No need to dust with powdered sugar as the surface is already very tasty.

  • If you, like me, use LACTOSE-FREE ingredients, this bundt cake will be suitable even for those who are intolerant 😉

Saby advises…

If you want to give your pear and amaretti bundt cake an even more intense amaretti flavor, I suggest using a small glass of amaretto instead of lemon zest for flavoring. It will give the bundt cake a very special taste.
