Today I have a delicious recipe for you: pizza strips, small pieces of dough fried and seasoned to be served with cold cuts or vegetables. At first glance they might seem like fried dumplings, but the dough is slightly different. However, the preparation and shape actually resemble fried dumplings. Anyway, like fried dumplings, pizza strips should be served with cold cuts and cheese. Easy to make and surely a success, because they are literally a temptation, one after the other, especially if you serve them with an aperitif. Ingredients
- 4 cups all-purpose flour
- 7/8 cup water
- 3.4 oz milk
- 2 tablespoons olive oil
- 1 teaspoon salt
- 0.3 oz fresh yeast
- 2 teaspoons sugar
- to taste dried oregano
- to taste pepper
- to taste salt
- as needed sunflower oil (for frying)
Steps
Start preparing the pizza strips by pouring the flour into the bowl of a stand mixer. Separately dissolve the fresh yeast in half a glass of water with the sugar. Then pour the dissolved yeast into the mixer and start kneading. Always use the dough hook. Of course, if you don’t have a mixer, you can knead by hand.
Then add more water and the salt, alternating with the oil and milk. At this point, the dough will be ready to rise. Cover the bowl with a dry cloth and let it rise until doubled.
When the dough is ready, weigh it and divide it into 4 equal parts. Then, using a rolling pin, roll one of the 4 dough balls into a rectangle about 0.4 inches thick. Now, using a cutter wheel, cut many diamonds as large as a walnut and let them rise for another 15 minutes.
At this point, pour plenty of sunflower oil into a pan. I used about 17 oz. Heat it well and pour in your pizza strips. Let them cook on each side for about 3-4 minutes until they puff up and then place them on absorbent paper.
Then place them in a clean bowl and season with some salt, pepper, and oregano. Mix well so that all the strips are seasoned with the aromas.
Then serve your pizza strips with a nice platter of cold cuts and cheeses or with grilled vegetables.

Pizza strips can be easily frozen after being cooked. So, prepare a large quantity and freeze them. Make several portions and defrost them a couple of hours before serving; they will be perfect.
