In my list of cheesecakes, San Sebastian Cheesecake “burnt cake”, as it is often called, couldn’t be missing. It’s a Spanish cheese cake and it has the particularity of being very soft and is baked at a high temperature to maintain the creaminess of its interior. It’s a simple cake to prepare and you can serve it with lots of chocolate ganache as I did and as they serve it in Istanbul too. Mine is lactose-free, so it’s perfect even for those who are intolerant. But now let’s see how to prepare it in the following recipe.

Ingredients
- 2.2 lbs cream cheese (lactose-free)
- 2.1 cups heavy cream (lactose-free)
- 6 eggs (medium)
- 2 tsps vanilla extract
- 5 tbsps cornstarch
- 1.5 cups sugar
- 3.5 oz dark chocolate
- 0.8 cups heavy cream (lactose-free)

- 1 Parchment paper
- 1 Electric whisk
Steps
Preparing the San Sebastian cheesecake is very simple. Start by lining a 9-9.5 inch springform pan with parchment paper. Be sure to line the sides with strips of parchment paper as the cake will be quite tall. Now preheat your oven to 450°F.
If you do not have a 9-9.5 inch pan, you can also use a 10-inch springform pan as I did in the picture below; it will be less thick but just as good.
Now, in a large bowl, literally pour all the ingredients and start mixing with a whisk until you get a smooth, lump-free batter. If you want, you can obviously mix the eggs with the sugar first and then gradually add the cheese, cream, cornstarch, and finally the vanilla extract. However, in all the recipes I’ve read, I haven’t found one that indicated it was necessary. At this point, gently pour the batter into the pan and level it. Then bake your San Sebastian Cheesecake for 1 hour and 10 minutes. It may take a few more minutes, but this will depend on the power of your oven. The cake will immediately tend to darken on the surface, know that this is perfectly normal.
After the San Sebastian cheesecake is ready, let it rest in the semi-open oven for at least 3-4 hours.
Then, if you want, you can prepare a chocolate ganache by pouring the dark chocolate cut into small pieces into a bowl, add the hot cream, and mix vigorously. Then pour the ganache over your slice of San Sebastian cheesecake and enjoy this delight.
