I know it’s hot and you don’t feel like cooking, but if you start the day with a good and rich breakfast, you can also eat cold dishes like salads for the rest of the day. The perfect breakfast for me during this period is precisely oat crepes and fresh, naturally seasonal fruit. And what could be better than blueberries and strawberries? But let’s see together how to prepare these crepes in the following recipe. For this recipe, you can use either oats or oat flour.

Ingredients

  • 1.5 cups oat flour (or oats)
  • 1 egg
  • 0.8 cups almond milk (or cow milk)
  • 1.6 tsp baking powder
  • 2 tsp honey
  • 3.5 oz fresh fruit of choice (I use blueberries and strawberries)
  • to taste maple syrup (optional)

Steps

Start preparing your oat and fruit crepes by washing and drying the latter. If you decide to use strawberries, cut them into thin slices. Now move on to preparing the crepes: if you decide to use oats, blend them in a powerful mixer until you obtain flour. Then beat the egg and add the honey, alternating the flour with the milk until you have finished both ingredients. At this point, heat a non-stick pan of 7 inches and pour half of the batter, cook well on one side for about 2-3 minutes, then flip your crepe and complete the cooking.

  • Do the same with the rest of the batter until you have finished. Then place your crepes on the plate and decorate with fresh fruit and maple syrup and enjoy immediately.

I used a 7-inch pan to get 2 crepes, but you can vary the size of the crepes at your convenience, doubling the batter will also double the servings.
