How to prepare tozzetti or cantucci with a single dough
Prepare the dough: Place the flour in a mound on the work surface, add the eggs with the sugar, and start mixing, then add the rest of the ingredients except the dried fruits, knead well to form a nice dough ball, and let it rest in the refrigerator for at least 30 minutes.
Shape and cut the cookies: After resting, divide the dough into 4 parts and roll it a bit, place the filling in the center, close it all up, and knead again. Now form long logs, place them on a baking tray lined with parchment paper, and bake at 350 degrees Fahrenheit for about 20 minutes, but adjust with your oven as they should be golden.
Second baking: The double baking is the secret. Don’t rush; the first baking is only to cook the dough, and after cutting them, proceed with the second baking. If you’re wondering if it’s necessary, I say yes because it’s thanks to the second baking that they get the right soft and crunchy consistency, so after baking the logs, let them cool a bit, and then with a smooth-bladed knife, start cutting them obliquely about 1 cm thick. Put them back on the tray and bake for another 10 minutes. They should be nicely golden but not hard. Let them cool well before enjoying them.
