Panettone Cookies – the shortcrust pastry that smells like Christmas without leftovers

After the tremendous success of the almond and apricot biscuits, I wanted to create a cookie that tasted intensely of Christmas. Sure, I also made the famous Gingerbread Men, but this time I dared: I created a shortcrust pastry that encases, bite after bite, all the flavors and aromas of the most beloved Christmas dessert, without using even a crumb of Panettone!

Ingredients

The ingredients are few and simple, but for a great result, I recommend using high-quality ingredients

  • 2 1/4 cups all-purpose flour (if necessary, also 1/4 cup more)
  • 1/2 cup butter (softened)
  • 1 egg
  • Half packet baking powder
  • 4 tbsps candied orange
  • 2 tbsps raisins
  • 1 vanilla (bean)
  • 1 lemon (zest only)
  • 1 orange (zest only)
  • 1 tsp honey

Steps

Follow these simple steps to make soft and fragrant cookies

  • Prepare the shortcrust pastry: Put the sugar together with two tablespoons of candied orange, the seeds from the vanilla bean, and the citrus zests, and blend everything with the Thermomix for 10 seconds at speed 10. Add all other ingredients except the raisins and the remaining candied orange, mix everything with the Thermomix for 20 seconds at speed 5.

    Shape the cookies: Once the dough is formed, add the raisins soaked in water and the rest of the candied orange, knead everything well, cover and let it rest for at least 30 minutes in the refrigerator. After resting, shape into balls of the same size and place them on a baking sheet covered with parchment paper, sprinkle with granulated sugar.

    Bake the cookies: Bake at 350°F (180°C) for about 15/20 minutes. Once baked, let them cool and then enjoy the delight.

If you store the cookies in a box, they will keep for several days. You can prepare the shortcrust pastry in advance, even the day before, but keep it in the refrigerator.
