Homemade Pretzels

Pretzels are a typical German bread with a unique shape, featuring a golden, crunchy crust sprinkled with coarse salt.

The characteristic of pretzels is the double cooking process. The original recipe involves the first cooking with caustic soda, while in the ‘homemade’ version, baking soda is used, followed by a second baking in the oven.

Excellent right out of the oven! Soft inside and crispy outside!

Ingredients

  • 2 cups Manitoba flour (380W)
  • 1/2 cup cold water
  • 2 tsp granulated sugar
  • 1 tsp fresh brewer's yeast
  • 1 tsp fine salt
  • 2 tbsp butter
  • as needed water
  • 1 oz baking soda
  • coarse salt

Steps

  • The preparation of the dough is a very important step for the success of the recipe.

    Hand-made dough. Make a well with the flour, crumble the yeast in the center, add the sugar and pour in part of the water. Incorporate some of the flour and let it rest a few minutes to activate the yeast. Then add the salt, butter, and the remaining water. Knead thoroughly until you get a smooth and uniform dough. Cover with plastic wrap and let it rest for 20 minutes.

    Dough with kitchen robot. Put all the ingredients in the bowl replacing part of the water quantity (2/3) with ice cubes. Blend for 30 seconds at maximum speed and then transfer the dough to the work surface. Knead and compact into a ball, then cover with plastic wrap and let it rest for 20 minutes.

  • Take the dough again and divide it into 4 equal parts. Work each part repeatedly bringing the ends towards the inside. Shape into ropes with tapered ends, knot the ropes giving them the typical pretzel shape. Take the two ends with your hands and cross them twice, then fix the ends by flipping them onto the top.

  • Pour a little water onto a baking tray, lay out a sheet of parchment paper and place the pretzels.

  • Cover with plastic wrap and let it rise for about an hour and a half – two.

  • In a large pot, bring plenty of water to a boil with 1 oz of baking soda. Immerse the risen pretzels for 40 seconds. When they rise to the surface, remove them with the help of a slotted spoon and place them on a dry and clean dishcloth to dry.

  • Preheat the oven to 428°F (220°C). Place the pretzels on a baking sheet lined with parchment paper and sprinkle them with flake coarse salt. Once the temperature is reached, bake in the oven for about 20 minutes or until they reach the typical brown color of pretzels.

  • Carefully remove from the oven and let them cool slightly.

    You can accompany them with cold cuts, cheeses, and enjoy them with a beer.
