When I prepare a buffet, I always think of many simple, diverse things that are beautiful to see and good to taste. Simple especially in preparation. This way, I can dedicate more time to other things.
The zucchini and salmon rolls are enjoyed cold, allowing you to prepare them in advance, or, for example, grill the zucchini at one time and focus on the final preparation just before setting everything on the table.

Ingredients
- zucchini
- smoked salmon
- fresh spreadable cheese
- olive oil
- salt

Preparation
Wash the zucchini under running water and then slice them thinly.
Meanwhile, heat a non-stick griddle. To check if it has reached the right temperature, you can pour a teaspoon of water and see if bubbles form.
At this point, lay the zucchini slices (thin but not too thin, or they will break) and cook for a few minutes on each side. Finally, let them cool on a serving plate and adjust the salt.
Now we can fill our rolls! Lay the grilled zucchini on a cutting board and spread some fresh spreadable cheese over it. I often use classic Philadelphia, but you can also try it with herbed Philadelphia (usually comes in smaller packs of 6 x 25 grams).
Cover the surface with the salmon and roll the zucchini onto itself to form a roll.
No need to use toothpicks. Just place the rolls close to each other.
Let rest in the refrigerator for 10 minutes or until ready to serve.
