The custard cream is the most well-known cream in pastry making. It is served as a spoon dessert or used to fill pastries (cakes, cream puffs, puff pastries, etc.). Easy and quick to make. It is a sauce made with eggs, milk, sugar, and flour.

Ingredients
- 3 1/8 cups Milk
- 3 Eggs
- 1 Yolk
- 8 oz Sugar
- 1/4 cup Cornstarch
- 1/4 cup All-purpose flour
- 1 Lemon
Preparation
Arrange all the ingredients on the work surface that you need to prepare the custard cream.
First, whisk the eggs with the sugar. Then, sift the flour and cornstarch. Continue whisking until the ingredients are combined.
Meanwhile, heat the milk with lemon peel in a saucepan until almost boiling.
Pour a little milk into the bowl with the other ingredients.
Remove the lemon peel and transfer all the bowl contents back with the milk. Put the saucepan back on low heat and stir with the whisk until the cream thickens.
Pour into a container, cover with cling film adhering to the surface, and let it cool.The custard cream is ready!

Put all ingredients in the bowl.
Cook 7 min./90°F/speed 4.
Transfer the cream to a bowl, cover with cling film adhering to the surface, and let it cool.
Then, refrigerate until use.
Personally, I recommend leaving it in the fridge and using it the next day… it’s delicious!!
