Ingredients

  • 2.5 oz of spaghetti
  • 2.8 oz of cherry tomatoes
  • 2.8 oz of canned grilled mackerel fillets
  • 1 fresh Tropea onion
  • 1 bunch of arugula
  • a few Taggiasca olives
  • 2 tbsps of extra virgin olive oil
  • to taste salt
  • to taste oregano

Steps

  • We put the pot of water for cooking the spaghetti, and in the meantime, we prepare the sauce.
    Wash and cut the cherry tomatoes in half.
    Clean and finely chop the fresh onion, then add it to a pan with the oil and let it brown.

  • Add the cherry tomatoes and season with salt and oregano.

  • Continue with adding the Taggiasca olives, let it cook for 5 minutes, and then finish with the mackerel fillets.
    I opted for a light sauce, using grilled mackerel fillets in natural juices.
    Let all the ingredients flavor for another 2-3 minutes.
    Drain the spaghetti and dress them directly in the pan, adding the arugula.
