Baked Breaded Cod Fillets

Ingredients for Baked Breaded Cod Fillets

  • 14 oz cod fillets (5 pieces)
  • 2 eggs
  • 1/3 cup flour (I used a low glycemic index one)
  • 1 cup breadcrumbs
  • 1 tsp sweet paprika
  • to taste fine salt
  • 2 tbsps extra virgin olive oil

Preparation of Baked Breaded Cod Fillets

  • Thaw the cod fillets, for example, take them out of the freezer in the evening to prepare them the next morning. Once the fish is thawed, proceed with the recipe.

  • In a bowl, beat the eggs with a pinch of salt, prepare two sheets of parchment paper, one with flour and one with breadcrumbs mixed with paprika and a pinch of salt.

  • Dip each cod fillet first in the flour, then in the beaten egg and finally in the breadcrumbs, making sure to coat well on all sides.

  • Place the breaded cod fillets on a baking tray lined with parchment paper, pour the oil over them and preheat the oven to 428°F, once hot, bake and cook for 15 minutes. When done, take the cod fillets out of the oven and enjoy!

Tips

You can replace sweet paprika with smoked or spicy paprika.

You can add powdered garlic to the paprika.

You can replace paprika with a mix of garlic and parsley.

You can add grated untreated lemon zest to the breadcrumbs.

Instead of low glycemic index flour, you can use all-purpose, whole wheat, or cereal flour.
