Among all the versions of fit towers I’ve tried, the one I loved the most was with persimmons, which we also call loti. I waited a year to finally see them again on the fruit and vegetable stalls with the arrival of autumn. I can’t explain how satisfying this variant is in terms of taste and texture, but not everyone loves this fruit. Yet, its sugary yet energizing nature makes it suitable for children, the elderly, and athletes! Furthermore, it contains high amounts of antioxidants, fiber, and vitamins, which means this fruit can be a great ally for our immune system, and in general, it is very beneficial for the health of our body. The base is always the same: rusks softened in plant-based milk and layered with Greek yogurt. The pulp of a small smashed persimmon, a touch of homemade tahini, dark chocolate shavings and finally, for a touch of freshness, lime zest. Paired with a drink of your choice, this tower will give you the right boost to face the day, ensuring a sense of satiety until the next meal!

Ingredients

- 2 rusks (no sugars)
- 2 tablespoons Greek yogurt 2% fat
- 25 oz plant-based milk (sugar-free)
- 1 persimmon (about 1.7 oz)
- 1/2 teaspoon tahini (or 1 full level)
- 0.2 oz 85% dark chocolate
- 1/2 lime (untreated zest)

Steps
To start, soak the first rusk in the plant-based milk on both sides to soften it slightly. At this stage, it’s important that the rusk is well soaked but sufficient to remain intact.
Let the excess drain, place it on a breakfast plate, and cover the entire surface with a generous tablespoon of Greek yogurt.
Place the second soaked rusk softened also previously in the plant-based milk on top.
Cover the surface with another generous tablespoon of yogurt.
At this point, wash a persimmon, remove the small part, and cut it in half.
With a teaspoon, extract all the pulp.
Crush it and spread it directly on the top of the tower.
Then add the sesame cream (tahini), trying to distribute it in small portions over the entire surface using a knife or spatula.
Separately, chop the chocolate with a knife to obtain fairly coarse shavings.
Garnish with dark chocolate shavings and lastly some lime zest.
These quantities are for one person obviously.
And voila…the autumn fit tower with persimmons and lime is ready to be enjoyed!

👉 The fit tiramisu tower should be consumed immediately after preparation. It can be prepared the night before to be eaten the next morning, keeping it inside a suitable refrigeration container, preferably glass.
